Leftover Lamb Fritters

Ingredients

6 portion(s)

Fritters

  • 500 grams leftover Lamb roast
  • half red capsicum
  • 1 onion, or 2 spring onions
  • 1 tablespoon TMX veggie stock
  • 1 egg
  • 250 grams Self Raising Flour
  • 250 grams Milk
  • 150 grams cheese
  • 1 cob of corn kernels
  • salt and pepper to taste
  • olive oil

Recipe's preparation

    Fritters
  1. Grate the cheese 10 seconds speed 5 then set aside.

     

    Chop lamb, capsicum and onion for 10 seconds speed 5. Check and see if ingredients are chopped to your liking, chop longer if preferred.

     

    Add all other ingredients and the cheese that was set aside in step 1 to the TMX bowl. Mix Counter-clockwise operation speed 3 for 1 minute. 

     

    Add oil to a frypan and cook until golden brown. 

     

    Serve warm with salad or cold for lunches the next day.

     

    Fritters can be kept warm in a thermoserver with some paper towel on the bottom to absorb any excess oil.

Tip

Any leftover meat will work well with this receipe, you can use Christmas ham, chicken, beef, pork or create a vegetarian fritter with some extra veggies.

    Added zucchini, parsley, garlic to mix. Used half cheese as suggested by others. Didn't use capsicum. Used leftover corned beef. Family weren't keen on corn so would try peas next time. Definitely make again.

    These were great, i only used 50g of cheese, and i added a zuccini and half a tin of cannellini beans (nobody noticed!) and they were delicious ... I sampled one or two straight from the pan (had to make sure they were cooked!).

    Agree with previous comments - yummy. Bit less cheese (maybe 120g). Certainly don't need any salt added. Thanks for sharing. Also added only about 220g of flour based on previous comment and that seemed to work well.

    Very knew to thermo mix cooking, but have made plenty of frittters over the years.These were very nice. Probably wouldn't use quite that much cheese next time, we found them a little to soft.

    Thank you for this delicious recipe, I didn't have as much leftover lamb so I added a tin of lentils and they turned out very tasty and easy to make. I'm definitely going to use this recipe on a regular basis.

    OMG they were so yummy better than I have ever tasted and it got the thumbs up from the person that grew up with fritters.

    I will definately be cooking them again. I added a little more milk and only chope onion and meat for 5 seconds cause he like it lumpy  tmrc_emoticons.)
