- 1 Marrow bone, split lengthways down middle.
- 2 cloves garlic
- 1 onion
- 40 grams Butter
- 2 teaspoons Vegetable stock paste
- .5 bunch flat leaf parsley
- 500 grams beef stock or water
- 30 grams cornflower or arrowroot

Scoop out bone marrow with teaspoon and set aside.
Chop onion and garlic 3 sec/sp 6.
Scrape down sides of mixing bowl.
Add butter and cook 3 mins/100 degrees/sp 1.
Add vegetable stock and cook 3 mins/100 degrees/sp 2.
Add beef stock and cook 10 mins/100 degrees/sp 2.
Add bone marrow and cook 3 mins/100 degrees/sp 3.
Add cornflower or arrowroot and mix 2 mins/sp 3.
Add parsley and chop 3 sec/sp 5.
Freeze into ice cube tray and use as gravy or butter whenever needed.
