Clone of Ezy Sauce Relish

  • 1200 g ripe tomatoes, cut into quarters
  • 350 g onion, cut into quarters
  • 1 tablespoon sea salt
  • 400 g brown sugar
  • 2 tsp curry powder
  • 2 tsp mustard powder
  • 500 g malt vinegar, plus 3 tablespoons extra
  • 1 1/2 tsp ground black pepper
  • 1 1/2 tsp chilli powder
  • 6 drops clove oil
  • 2 tablespoons cornflour

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Sterilise 4 x 300ml jars with lids
  2. Place varoma onto mixing lid and weigh 1200g prepared tomatoes into it. Place varoma with the tomatoes over a large bowl to drain.
  3. Place onion into mixing bowl and chop 2 sec/speed 6. Add to varoma with the tomatoes, sprinkle with salt, then stir to combine. Set aside for 1 hour to drain or overnight for a thicker relish. Discard drained liquid
  4. Place sugar, curry powder, mustard powder, black pepper, chilli powder, clove oil, 500 g of the vinegar and drained tomato mixture into mixing bowl. Place varoma dish without varoma lid instead of measuring cup onto mixing bowl lid, then cook 60 min/120°C/Counter-clockwise operation/speed 0.5
  5. Place cornflour and the extra 3 tablespoons vinegar in a small bowl, then stir to form a smooth paste. Add to the tomato mixture in mixing bowl, stir with aid of spatula, then cook 2 min/100°C/Counter-clockwise operation/speed 1 or until thickened. Carefully pour hot relish into sterilised jars, seal and invert for 10 minutes. Cool completely, then store in pantry until ready to serve.
