Coriander cashew and lime pesto

  • 1 peeled lime, medium size, juicy
  • 30 grams olive oil
  • 1 bunch coriander
  • 120 g Roasted Cashews
  • 1/4 teaspoon sea salt or Himalayan salt
  • 1/4 teaspoon white pepper
  • 1 large garlic clove

Recipe's preparation

    This is a great accompaniment to fish, or can be used as a salad dressing. If you use as a salad dressing, add a little more oil at the end.
  1. Wash coriander and remove roots.


    Peel garlic.


    Peel lime.

  2. Add lime, coriander, garlic, olive oil, salt and pepper to Thermomix bowl, MC on and process sp 8 20 secs.

  3. Add cashews and process turbo 3 sec approx 6 times until your desired consistency is reached (I scrape down sides each time)

Tip

Additional cashews can be added for a chunker texture, add extra oil to loosen texture for a salad dressing. This is especially nice with steamed salmon.
