Creamy garlic "surf" sauce

Ingredients

500 g

Ingredients

  • 300 g thickened cream
  • 2 teaspoons garlic
  • 2 teaspoons parsley
  • 1 teaspoon Butter
  • 12 raw peeled prawns
  • 12 Raw squid rings
  • to taste Salt and pepper

To thicken

  • 1 teaspoon cornflour, As needed. Check sauce consistency and repeat mixing steps if needed more than once

Recipe's preparation

    Sauce
  1. Add parsley to bowl chop 10sec/speed 5. Remove and set aside.

  2. Add garlic to bowl and chop 10sec/speed 5. Scrape down sides and repeat if neccesary. 

  3. Add butter and saute MC OFF 2mins/Varoma/Speed 2

  4. Add cream and parsley and seafood, cook MC OFF and TM basket on lid 10 mins/100/counter-clockwise operationGentle stir setting keeping watch that it doesn't boil over. taste and add salt and pepper if using. You can add the Butterfly if needed. 

  5. For a thicker sauce add 1 tsp of cornflour, mix 10 seconds/ Gentle stir setting/counter-clockwise operation then cook 2 mins/100/counter-clockwise operationGentle stir setting. Repeat if necessary

Tip

Sauce for Surf and Turf or Reef and Beef.

I like to overdo it on the seafood, but you can remove it altogether and use on chicken, fish, vegetables.

The sauce needs to have turned yellow otherwise it's still cream

    I made it with 300g of prawns as that’s what I had. I also added 4 garlic cloves as we really like garlic. I followed the suggestions and used cornflour to thicken it. It was delicious on steak. Even the 2 year old ate it all - high praise!!

    THUMBS UP from the hubby, we were having steak one night but I personally felt like seafood. I ended up using a cup of frozen prawns (defrosted) not the best choice but the sauce came out great thick and creamy for a surf n turf steak mmmmmmm tmrc_emoticons.D

    Awesome! I used 6 cloves of fresh garlic, 12  prawns and served in on top of steamed fish and veg. Was a hit even with the kids  tmrc_emoticons.)

    Thanks for this recipe. Turned out great but I only put in about 8 prawns and no squid so added a pour of white wine and about a teaspoon of veggie stock concentrate at the same time as adding the cream. I did thicken mine with the cornflour as suggested.
