  • 200 grams thickened cream
  • 5 grams cornflour
  • 5 grams seeded mustard
  • 10 grams brandy

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Peppercorn sauce
  1. Add peeled shallot and 1 tbsp of peppercorns and chop on speed 5, 3 seconds.

    Add olive oil and saute,  3 minutes, speed 2, 100 degrees

    Add remaining ingredients and cook for 4 minutes, speed 3, 100 degrees Counter-clockwise operation.

    Season to preference and serve immediately.

    This is a wonderful peppercorn sauce recipe - perfect pairing for your steak! The only things I do differently are:
    I add a couple sprigs of parsley leaves in step 1 with the shallot and peppercorns.
    I add one teaspoon of Homemade vegetable stock paste in step 2
    I use fortified wine instead of Brandy.
    I add an extra 5 grams of cornflour.

    Love this recipe! I add a couple more teaspoons of cornflour to make it a little thicker.
