- Zest of 3 Limes
- zest of 1 lemon
- 125 gram lime juice
- 100 gram lemon juice
- 400 gram raw sugar
- 175 gram unsalted butter
- 4 eggs

Add all ingredients
Insert MC, and cook at 80c for 20 minutes on Speed 3
When ready, the mixture should coat the back of a spoon. If not thick enough cook in 2 minute increments (80c Speed 3) until desired consistency is obtained.
Pour hot mixture into jars, seal and refrigerate.
If long term storage is required, process using your favourite sterilisation and sealing method.
Accessories you need
Zest your limes and lemons before juicing by either using a zester or a peeler to remove only the coloured part of the skin.
If using a peeler, you should place the strips in the bowl and blitz for 10 seconds on speed 9. If you find that the peel isn't fine enough, add in 100 gm of the sugar and blitz for another 10 seconds on speed 9.
You can then proceed with the recipe.
