Easy Lemon Lime Butter

Lemon Lime Butter

  • Zest of 3 Limes
  • zest of 1 lemon
  • 125 gram lime juice
  • 100 gram lemon juice
  • 400 gram raw sugar
  • 175 gram unsalted butter
  • 4 eggs

Recipe's preparation

  1. Insert butterfly in bowl

  2. Add all ingredients

  3. Insert MC, and cook at 80c for 20 minutes on Speed 3

  4. When ready, the mixture should coat the back of a spoon.  If not thick enough cook in 2 minute increments (80c Speed 3) until desired consistency is obtained.

  5. Pour hot mixture into jars, seal and refrigerate. 

  6. If long term storage is required, process using your favourite sterilisation and sealing method.

Tip

Zest your limes and lemons before juicing by either using a zester or a peeler to remove only the coloured part of the skin.  

If using a peeler, you should place the strips in the bowl and blitz for 10 seconds on speed 9. If you find that the peel isn't fine enough, add in 100 gm of the sugar and blitz for another 10 seconds on speed 9.

You can then proceed with the recipe.

    Tangy, and such an easy recipe. I used only limes, and it filled 2 jars. The first jar was gone within 2 days! I'm making more, and will be freezing it.

    LOVED this recipe. So easy and quick! I was given a bag of limes and couldn't think what to do with them, so made this recipe with only limes, replacing the lemon portion with lime of course. So thank you for posting this xxx
