- 1 Small brown onion, peeled, halved
- 2 clove garlic, peeled
- 1 --- Handful continental parsley
- 50 g grass fed butter, (paris creek)
- 400 g mixed mushrooms, thickly sliced, (field, swiss brown)
- 1 tablespoon Stock Concentrate
- 1 tsp porcini or regular salt
- 400 g water
- 4 tsp tapioca flour
- pinch cracked black pepper

Recipe's preparation
Add onion, garlic and parsley to TMX bowl. Chop on speed 6 for 4 seconds. Scrape bowl down.
Add butter and mushrooms to TMX bowl. Cook on reverse, speed 1, 8 minutes, 100 degrees. MC OFF.
* While mushrooms are cooking, combine stock concentrate, water and tapioca flour in a cup.
Add water mixture, salt and cracked pepper to TMX bowl. Cook on reverse, speed 1, 3 minutes, 100 degrees. MC OFF.

Brilliant. Mine was pale as I only had button mushrooms. The onions needed to be sauted rather more. I would also make it a little thicker as it was rather like soup. But a very delicious soup at that. To make it fully Paleo I will try using goose fat next time. Thank you for a go to every day mushroom gravy.

Absolutely delicious. Had it over sausages and mash. Will be my go to for steak, schnitzels and chicken! Added a handful of blitzed dried porcini mushrooms, and used beef stock. Yum.

Sorry wasn't a fan. The mushrooms needed more roasting and lacked the intense flavours that I was hoping for in a mushroom sauce. Used more than $11 worth of mushrooms and so froze the leftovers.

this was delicious! great for over eggs for breakfast, or steak and cauli mash for dinner. Instead of water and stock concentrate I used 400g Chicken bone broth for some extra goodness. thanks for this recipe!
