Pesto - Basil, Mint and Lemon

  • 120 gram parmesan cheese cubed
  • 60 gram Pinenuts (Raw or Toasted)
  • 1 -2 cloves garlic
  • 1.5 Lemons, juiced
  • 1/2 Lemon, Rind only
  • 1/2 bunch mint leaves
  • 2 bunch Basil leaves
  • 2 bunches Continental Parsley
  • 1 bunch chives, Optional
  • 2 sprigs Oregano, Optional
  • 120 grams olive oil
  • 1/4 teaspoon salt, To taste
  • 1/4 teaspoon pepper, To taste

Recipe's preparation

  1. Place Parmesan cheese into mixing bowl and grate 15 seconds/speed 10


  2. Add all ingredients - pine nuts, garlic, herbs (herbs should be approx 80g in total), olive oil, lemon rind and juice, and seasoning (to taste)


  3. Chop 30 seconds/speed 7


  4. Scrape down sides, and if necessary chop another 30 seconds/speed 7


  5. Transfer into a jar for fridge (approx 1 month lifespan) or freeze in portions

dolloped in thick vegetable soup,

pasta sauce (with pasta water or cream),

Risotto finish


lamb, chicken or seafood

marrinate or serving sauce

so delicious you'll eat it by the spoonful
