Pumpkin, Cashew & Parmesan Dip

Ingredients

For the Dip

  • 500 g pumpkin - skin removed, Cut pumpkin into small pieces approx 1cm
  • 2 clove garlic, Peeled
  • 100 g Roasted Cashews
  • 60 g Parmesan cheese, Cut into small pieces approx 2cm
  • 20 g olive oil
  • salt, To Taste

Recipe's preparation

    Method
  1. Place pumpkin & garlic into a bowl. Pour over olive oil and salt.  Stir until all pumpkin and garlic are covered with oil and salt mixture.

     

    Place a sheet of baking paper onto a roasting tray and then place pumpkin and garlic onto tray.  Roast in oven at approx 200c for around 20-25 min or until pumpkin is tender and golden.  Then remove from oven and allow to cool for 5 mins.

     

    Place Cashews & Parmesan into Thermomix Bowl and mill 7-10 seconds, speed 9.  Or until they resemble a bread crumb consistency.  Put aside in seperate bowl.

     

    Place pumpkin & garlic into Thermomix Bowl and blend 7 secs, speed 7.    Or until a paste forms.

     

    Add the reserved Cashew and Parmesan mixture.  Add salt to taste if desired and a little extra oil if required.  Blend for 5 secs, speed 5.

     

    Serve immediately or refridgerate until required.

Tip

If you wanted a more healthier version of this dip.  You could skip covering the pumpkin & garlic in olive oil and steam them in the tray of the Varoma for approximately 25 minutes.  (check required amount of water for bowl).  Instead of using your oven.
