- 900 grams water
- 500 grams medium carrots, roughly chopped
- 1 tsp paprika
- 1/4 tsp cayenne
- 2 tsp ground cumin
- 80 grams freshly squeezed lemon juice
- 80 grams extra virgin olive oil
- 2 cloves garlic
- 1 centimetre Ginger, peeled
- salt and pepper to taste
- chopped parsley, to garnish

Recipe's preparation

Place carrots in TM simmering basket
Place water in TM bowl
Cook in TM for 16 mins on Varoma speed 4
If the carrots are still hard cook for a further 2-4 minutes
When soft but not mushy, remove and drain
Allow carrots and TM bowl to cool
Chop garlic and ginger on speed 7 for 2 – 3 seconds
Add remaining ingredients including the carrots and blend on speed 6 for 10 seconds or until smooth
Refrigerate before serving
Garnish with parsley or other herbs and additional lemon (optional)
Freezes well
