Thermo Papa's veg loaded pizza sauce

Pizza Sauce

  • 3 cloves garlic
  • 1 onion, cut into quarters
  • 2 celery stalks, cut into pieces
  • 50 g olive oil
  • 1 carrot, cut into pieces
  • 1 zucchini, cut into pieces
  • 1/2 red capsicum, cut into pieces
  • 150 g tomato paste
  • 2 cans chopped tomatoes, 400g
  • 2 tbsp dried oregano
  • 2 tsp salt
  • 1 tsp black pepper, freshly ground
  • 1 tsp raw sugar
  • 2 bay leaves
  • 2 tsp fennel seeds

Recipe's preparation

    Thermo Papa's veg loaded pizza sauce
  1. Place garlic, onion, celery and olive oil into mixing bowl and chop 5 secs/speed 5
  2. Scrape down sides of mixing bowl with spatula then saute 5 mins/100 degC/speed 2
  3. Add carrot, zucchini and capsicum then chop 5 secs/speed 5
  4. Scrape down sides of mixing bowl with spatula then add remaining ingredients and cook 20mins/100degC/speed 2
  5. Blend 1 min/speed 9 then
  6. Spread approx 3 tbsp sauce evenly on prepared pizza dough, add favourite toppings & cheese, bake and enjoy!

Tip

Each portion is enough for 4x medium sized pizza bases.
Use fresh or divide into portions and freeze for up to 3 months.
Can also be used as a pasta sauce or to make pizza scrolls.

    Made a half batch, without the fennel seeds (because I don't like them) and gave an extra blitz at the end for the kids. Used half for a batch of pizza scrolls. Delicious
