Broccoli, Zucchini & Leek Soup

  • 300 g broccoli, Stems work well here
  • 300 g zucchini
  • 50 g leek
  • 30 g extra virgin olive oil
  • to taste pepper, black, ground
  • 1 level tablespoon stock paste
  • 650 g filtered water
  • 1 pinch cayenne pepper, can omit

Recipe's preparation

  1. Place all ingredients into the thermomix bowl (making sure the liquid is below the max line) cook 100 degrees/20 mins/ spd 2 with MC off
  2. Place on MC and blend soup gradually increasing speed from speed 4 to speed 9 for 1 min/sp 9

Tip

Bone Broth or Water and 1 Tbl Himilayan Salt can be used in place of the stock paste and water.
I like to use up the stalks from the broccoli for this recipe.
Great eaten cold or hot with garlic bread or pizza
