Recipe's preparation
- Place large pumkin (I use about 1/2 a JAP) in the microwave for 2 minutes before peeling and chopping up. It is heaps easier to peel and cut this way.
- Place onion and bacon into thermomix bowl
"Closed lid" and chop on speed 5 for 5 seconds until roughly chopped.
- add oil and saute 4 minutes at speed 2 - 120c
- add Cumin and Saute again 1 minute at speed 2 - 120c
- Add Pumpkin and enough Chicken Stock to cover the pumpkin and just up to the max line and set to 100c for 25 minutes or until pumpkin is tender.
- Making sure lid and MC are on at speed 6 blend the ingredients for 20-30 seconds. Enjoy!
- Serve with cream or sour cream, and a few drops of lemon juice or a small amount of sweet chilli sauce. Black pepper to taste.
