Pumpkin and Sweet Potato Soup

  • 1 brown onion, cut in quarters
  • 20 grams coconut oil, at room temp
  • 350 grams pumpkin, diced large cubes
  • 1 sweet potato, peeled and cubed - roughly 200 grams
  • 2 carrots, with skin on cut into pieces
  • 6 baby tomatoes
  • 500 grams water
  • 1 tablespoon Vege stock paste, (or vege stock powder) - add more if you like the taste
  • 30-40 grams coconut cream, depending on desired thickness
  • 1 pinch cayenne pepper, we like 2 teaspoons in ours as we like spicy food
  • salt, to taste
  • pepper, to taste
  • fresh basil or spring onion to garnish

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place brown onion into mixing bowl and chop 3 sec/speed 5 Closed lid.
  2. Remove bowl from thermie and scrape down sides of mixing bowl with spatula.
  3. 2. Add butter and saute 3 min/120deg./speed 1 Closed lid.
  4. 3. Add pumpkin, sweet potato and carrots and chop 15 sec/speed 7 Closed lid.
  5. 4. Scrape down sides of mixing bowl with spatula.
  6. 5. Add tomatoes, water and vegetable stock/paste and cook 20min/100deg./speed 1 Closed lid.
  7. 6. Add coconut cream and cayenne pepper and blend 1 min/speed 5-9, gradually increasing speed Closed lid.
  8. 7. If the stock paste isn't salty enough for you, season with extra salt and some pepper. Garnish with basil and serve hot.

Tip

Serve with fresh home made sourdough.
I don't peel the pumpkin if soft-skinned from my garden. Some bought ones are too tough.
