Quick and easy cold / flu fighting chicken soup

Ingredients

Soup

  • 1 heaped teaspoon ginger paste
  • 1 heaped tablespoon lemongrass paste
  • 3 small chillies, deseeded, more or less depending on how spicy you like it
  • 3 cloves garlic
  • 1 tablespoon sesame oil
  • 250 grams Mix Vegetables, (peas, carrots, broccoli, green beans, cauliflower, ...)
  • 1,5 litres water
  • 3 tablespoons chicken stock paste or veg stock paste
  • 1 fillet Chicken, Cubed

Garnish (optiona)

  • 1 bunch coriander
  • 2 Chillies

Recipe's preparation

    Soup
  1. Put ginger, lemongrass, chillies, garlic and sesame oil in the mixing bowl. Use turbo setting 1-2 seconds, scrape down the sides and repeat until everything is nicely chopped.

  2. Add water and stock to the mixing bowl. Put varoma dish on top, line with wet, crunched up baking paper (makes less of a mess) and add the chicken cubes. Make sure the paper doesn't cover all the holes otherwise the steam won't go through as well. 

    Cook 15minutes / varoma / speed 1

    Loved this soup. Made it when home from work suffering with a cold. Great flavour and fast to prepare. I just popped my chopped carrots, beans and broccoli in with the stock to cook. Had to cook a bit longer for chicken to cook through. I'll keep using this lovely comfort-food recipe. Thanks.
