Spicy Laksa Soup with Chicken and Prawn

Ingredients

Laksa Paste

  • 7 dried red chillies
  • 3 cloves garlic
  • 1 brown onion
  • 10cm stick Lemon grass
  • 4cm piece ginger, Fresh
  • 2cm piece galangal, Fresh
  • 2cm piece tumeric, Fresh
  • 40 g macadamia nuts, Unsalted
  • 10 g coriander, Fresh (leaves, stalks and roots)
  • 30 g peanut oil
  • 10 g mint leaves

Soup

  • 250 g Rice noodles
  • 800 g coconut milk
  • 1 tbsp TM stock concentrate
  • 500 g water
  • 300 g chicken
  • 3 Kaffir lime leaves, Fresh
  • 20 g fish sauce
  • 10 g palm sugar, Grated
  • 3 long red chillies, Fresh
  • 2 sticks spring onion, Thinly sliced
  • 100 g bean sprouts, Thinly sliced
  • coriander leaves, to garnish

Laksa Prawns

  • 150 g Prawns
  • 30 g peanut oil

Recipe's preparation

    Laksa Paste
  1. Place all ingredients for paste into bowl and chop 3sec/Sp 7, scrape down bowl and repeat until smooth.

  2. Reserve 1 tbls of paste aside for prawns, leave remaining paste in bowl.

  3. Soup
  4. Heat paste in bowl 3mins/Varoma/Sp 1.

  5. Place noodles into Thermoserver and cover with boiling water, set asaide.

  6. Add stock, water, cococut milk and chicken into bowl and cook 15min/80/Counter-clockwise operation/Gentle stir setting.

  7. Seal Prawns
  8. Heat 30g of peanut oil in wok on high heat.

  9. Add reserved table spoon of paste into wok.

  10. Add prawns to wok and cook until golden brown, then add to soup through hole in TM lid.

  11. Complete Soup
  12. When timer is complete on soup, add the palm sugar, fish sauce and juice of lime and cook for a further 5mins/80/Counter-clockwise operation/Gentle stir setting

  13. Drain water from noodles and place into serving bowls.

  14. Ladel soup onto noodles then top with coriander leaves, bean sprouts, chilli and spring onion.
