Spicy Vegetable Soup with Chorizo

Ingredients

2 litre(s)

  • 1 large onion
  • 2 cloves garlic
  • 1-2 Red Chillies
  • 2 Medium potatoes, peeled or cleaned and diced
  • 1-2 stalk Celery, roughly chopped
  • 150 g pumpkin, Skin cleaned, but can be left on, roughly diced
  • 1 can tomatoes, 400g
  • 150 g pure cream/sour cream/natural yoghurt
  • 2 tablespoon vegetable stock concentrate
  • 500 g water
  • 2 chorizo sausages, sliced and fried

Recipe's preparation

  1. Dice onion, garlic and chilli, 5 sec, speed 5.

    Saute 100C, 2.5minutes, speed 1.

    Add stock and water to TM bowl.

    Add all other ingredients to TM basket, arranging so they fit. 

    Place basket in TM bowl. Cook for 23 minutes, Varoma Temp, speed 2-3. Make sure MC is in place.

    Add veg from basket to bowl. Secure lid, with MC in place. Puree soup by going slowly up to Speed 6, then slowly onto speed 9 for 40 seconds. 

    Add Tomatoes, and Cream. Roughly puree on speed 5 for approx 10 seconds, or to desired texture. 

    Serve and garnish with chorizo.
