Ingredients

300 gms water

  • 2 teaspoons dried yeast
  • 250 grams bakers flour
  • 100 grams milled linseed or amaranth or freekah or buckwheat, this is your choice
  • 150 grams potato flour
  • 2 teaspoons brown sugar
  • 2 teaspoons bread improver
  • 1 teaspoon salt
  • 2 level tablespoons poppy seeds
  • 40 grams soft butter OR oil
  • 60 grams bakers flour, Keep this seperate to add in last 30 seconds of KNEAD

Recipe's preparation

  1. Add into bowl ingredients in order listed:

    300gms water

    2 teaspoons dried yeast

    2 teaspoon brown sugar

    150 gms Potato Flour

    100 gms milled grain of your choice (i use linseed, amarinth or freekah)

    250 white bakers flour

    2 teaspoons bread improver

    1 teaspoon salt

    a handfull of poppyseed

    40 gms soft butter butter or oil

    keep 1/4 cup of extra flour available for end of kneading process

  2. Spray a big plastic bowl with cooking spray, set aside

    Back to Thermomix:

    Mix for 5 seconds on speed 5

    6 minutes Dough mode

    in last 30 seconds, throw in 40gms of flour THROUGH the lid, whilst machine still on (this helps it unstick from the bowl a little).

    Place mixture in the prepared bowl, cover with cling wrap, place in a nice warm part of your house (no breeze).  Not too hot.

    Leave for 60 minutes.  Dough should be almost triple in size at this point.

    Spray your tin, set aside.

    Pcik up bowl of dough and drop it from a few inches off bench, dough will deflate.  You can also opt to punch it if it makes you feel good.

    Now shape the dough and place in your prepared bread tin, place cling film over the top.

    Place in COLD OVEN for 60 minutes.  Halfway through this time, check the rise, you may need to remove cling film. 

    When hour is over, turn oven on to 180 degrees celcius and cook for 40 minutes.

    Time is dependent on your oven and if fan forced.  I use fan forced, so 40 minutes seems to be about right.

    Bread becomes HUGE and very fluffy.

     

     

  3. You may also wish to make the dough into bread rolls, so after the first rise, measure dough out evenly to make buns, stack them close together on the baking tray and sprinkle Parmesan cheese on top. You can omit cheese if you wish.

    NOTE:  your baking tray needs to be at least twice the size of the bread rolls, ensure you have enough growing space.

Tip

 

if making rolls,make a little well in your dough and add in parmesan cheese then seal it up.

 

Apologies if this mixture has been created previously.  Please advise if I have done this.  I have tried many different flours and seeds and grains to get a bread that tastes and feels light, fluffy and yummy.
