Berry Exotic Antioxidant Balls / Truffles

  • 100 g Goji Berries, Dried
  • 150 g Figs, Dried
  • 215 g almonds
  • 1 tbsp Acai powder
  • 1 tbsp cacao powder, Plus extra to coat balls
  • 1 tbsp coconut oil

Recipe's preparation

  1. Measure out 100g Goji berries and 150g Figs. Place in a bowl and cover with boiling water. Soak for 15 mins.
  2. Drain fruit using the simmering basket.
  3. Add all ingredients to the TM bowl. Add MC. Chop / mix for 30 seconds on speed 9.
  4. Using spatula, scrape down the sides of the bowl. If not sufficiently chopped / mixed, Chop / mix again for 30 seconds on speed 9.
  5. Take tablespoons of the mixture and roll into balls. Mixture should be very sticky. Roll the balls in cacao powder. Refridgerate for 2 hours prior to serving.

Tip

Drain the fruit well - you don't want excess water in the mixture.

If you find the mixture too sticky, add more almonds, and repeat chopping.

The balls / truffles solidify significantly after refridgeration.
