Thai Inspired Chicken Meatball Soup with Cabbage Noodles (HCG P2)

Ingredients

Meatballs

  • 1 long green chilli, deseeded
  • 4 sprigs fresh coriander
  • 1/2 tsp Onion powder
  • 1 clove garlic
  • 1/2 tsp salt
  • 400 g chicken breast, in chunks

Soup

  • 1-2 tablespoon Chicken stock concentrate
  • 1 litre water
  • 4 sprig fresh coriander
  • 1 long red chilli, deseeded
  • 1/2 tsp Onion powder
  • 1/2 tsp Garlic powder
  • 10 g fresh ginger
  • 1 tsp lime zest

Noodles

  • 400 g cabbage, sliced into 'noodles'

Recipe's preparation

    Meatballs
  1. Describe the preparation steps of your recipe

  2. 1. Add chilli, coriander and garlic to bowl. Chop 5 seconds/speed 7. Scrape down sides of bowl. Chop again 3 seconds/speed 7.

     

    2.  Add onion powder, salt and chicken to bowl. Mince 10-15 seconds/speed 9.

     

    3. Form 12 meatballs from the mix and place in the simmering basket. Set aside.

     

     

  3. Soup
  4. 1. Add all ingredients to bowl. Blitz 5-10 seconds/speed 8 or until everthing is chopped to desired size.

     

    2. Place simmering basket with meatballs into bowl. Place varoma tray on top and fill with cabbage noodles. Cook 15 minutes/varoma temp/speed 2.

     

    3. Check meatballs are cooked through, cook a further 5 minutes/varoma temp/speed 2 if required.

     

    4. Serve and garnish with some fresh coriander.

Tip

Any vegetable of choice could be used instead of cabbage.
