Sweet potato and feta rolls

  • 600 g sweet potato, peeled and cut into 3 cm pieces
  • 20 g olive oil
  • 1 brown onion, cut into half
  • 1 garlic clove
  • 1 level tbsp Master foods Moroccan Seasoning
  • 1 bunch spinach, Trimmed and chopped
  • 100 g feta, Cut into 2 cm pieces
  • 400 g Canned Chickpeas, Drained and rinsed
  • 600 g Gluten free pastry sheet pack
  • 1 level tsp sesame seeds
  • 1 level tsp poppy seed

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Method
  1. 1. Place 1L water into TM bowl, add simmering basket and sweet potato. Cook for 15-20 minutes/100 degrees/speed 2 or until soft. Set aside cooked sweet potato and clean and dry bowl.
    2. Add onion and garlic to TM bowl, chop 3 seconds/speed 7
    3. Add olive oil, Moroccan Seasoning, chopped spinach and cook 5 minutes/100 degrees/speed 2
    4. Add cooked sweet potato, chickpeas, fetta and combine 30 seconds/speed 5
    5. Place mixture onto pastry sheet on the long edge, roll and enclose. Place onto prepared baking tray with baking paper placing seam down. Sprinkle with sesame and poppy seeds. Score into 6 pieces. Repeat with remaining mixture and pastry sheets.
    6. Bake at 220 degrees for 20 minutes or until golden brown.
