Salad
- 150 grams Firm tofu, roughly chopped
- 1/4 broccoli, roughly chopped
- 1 tomato, quartered
- 2 sprigs corriander, leaves only
- 2 sprigs mint, leaves only
- 1 tablespoon capers
- 20 grams olive oil
- 30-40 grams lemon juice
- 10 grams white wine vinegar
- 1 teaspoon Dijon mustard
- handful of baby spinach
- Salt & pepper to taste

Recipe's preparation
Put all ingredients except the baby spinach into TM and combine 3 sec / speed 4.
Scrape down sides. Comine for a further 2 sec / speed 3 if desired.
Lay out baby spinach in bowl or plate, top with salad.
