Zucchini fritters (Kolokithokeftedes) (vegan)

Ingredients

8 portion(s)

Thermomix

  • 2 Zucchini, large, roughly chopped
  • 1 potato, roughly chopped
  • 1 onion, roughly chopped
  • 1 carrot, medium, roughly chopped
  • 2 tablespoons mint
  • 2 tablespoons Dill
  • 2 tablespoons parsley
  • 1 tablespoon lemon zest
  • 110 grams breadcrumbs
  • 1 teaspoon salt
  • 1/2 teaspoon pepper, black
  • 1/4 teaspoon nutmeg, ground
  • 2 tablespoons Flaxmeal
  • 110 grams flour, all purpose

For draining/drying shredded zucchini

  • 2 teaspoons salt

Frying

  • 2 tablespoons olive oil, and a little extra in between batches if needed

Recipe's preparation

    Zucchini fritters (Kolokithokeftedes)
  1. Thermomix:

     

    . Shred zucchini speed 5, 15-20 seconds. Wring out in tea towel, sprinkle 2 teaspoons salt and leave aside for minimum 20 mins.

     

    . Shred onion and potato speed 5, 15 seconds. Wring out in tea towel and set aside.

     

    . Shred carrot and herbs speed 5, 15 seconds.

     

    . Add remaining ingredients including the shredded zucchini, onion and potato, speed 4, 15 seconds. Repeat if necessary to combine well.

     

    . Place into a bowl and rest for 10 minutes or up to 3 days covered in fridge.

     

  2.  Frying:

     

    . Roll into small balls (just under 1/3 cup for each).

     

    . Add 3 tablespoons olive oil into frying pan and bring to medium heat.

     

    . Place balls into hot pan, gently pat into patties.

     

    . Fry 2-3 minutes on each side until crispy golden brown.

     

    . Add two tablespoons oil in between each batch.

Tip

Toast a piece of bread if you don't have breadcrumbs on hand. 

Grind your toast and your flaxseeds first off if you don't have flaxmeal.

    These turned out great. We used home grown zucchini from the garden. We had the fritters in wraps with spinach, tomato and chutney. So good to find a recipe that doesn't need eggs.

    Made these today but have only cooked half and left other half in fridge to cook in two days. They were delicious. Love the freshness of the herbs and lemon zest. A little salty for my taste.

    That's awesome, biunderscoreanca! Thanks for the feedback. The greekvegan website has some goodies on there and worth converting to thermo (and possibly GF). Glad you loved it as much as we did. Double batch is a great idea as ours didn't last very long on the table either, omnivores and herbivores alike devoured them in a flash. Definitely worth the effort.

    I LOVE this recipe! Ticks all the boxes, healthy, vegan, easily converted to gf. Not as quick as other throw-all-in-the-bowl-and-go recipes but absolutely worth it! I'll just have to make a double batch next time so we have some leftovers because between the two of us we ate the whole lot!
