Beetroot Relish
- 500 g Beetroot, peeled, roughly chopped
- 180 g green apple, cored, quartered
- 1 small red onion, quartered
- 120 g apple cider vinegar
- 120 g balsamic vinegar
- 1 orange, just the juice
- 1/2 heaped teaspoons Dijon mustard
- 20 g oil
- 1/2 tsp ground cinnamon
- 1 tsp ground nutmeg

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- put beetroot, apple and onion into the bowl and chop 10 seconds/sp 5
- Add all the remaining ingredients and cook 30 minutes/varoma/"Counter-clockwise operation" /"Gentle stir setting" with the MC off (basket on top to prevent splatter).
- let cool slightly and put inot sterilised jars, store in fridge!

This goes with everything (savoury): salads, roasts, curries, burgers, risottos, big aussie breakfast (think egg, sausage, baked beans etc.),...
For additional sweetness add a handful of raisins or sultanas during step 2!

Terrific recipe! I love blueberries so I added 200g and my taste tester (gorgeous husband) gave it a thumbs up. We add it to so many things -sandwiches, chicken or beef burgers, put it on steak or chicken served with a salad and it really adds some wow factor. Thnx for a great recipe. SM

Very tasty! I think it would be lovely in a rare roast beef sandwich. I used grapeseed oil and added some dried cranberries.
