Strawberry and Vanilla Bean Jam

Recipe's preparation

  1. Hull the strawberries and put in TM bowl.

  2. Peel the lemon, place rind in TM bowl and grate on speed 7 for 5 seconds.

  3. Trim the pith off the lemon and discard. Cut the lemon into quarters and add to TM bowl.

  4. Add sugar to TM bowl.

  5. Cut the vanilla bean in half, then slit the bean lengthways (from top to bottom). Using the back edge (not the sharp edge) of the knife, scrape the seeds into TM bowl. Place the empty vanilla bean skins into the basket and place in TM bowl, for extra flavour.

  6. Cook for 20-25 mins at 100°C on speed 1.

  7. Increase temperature to Varoma, cook for 10-15mins on speed 1, or until it reaches setting point.

  8. Pot into sterilised jars and enjoy!

Tip

Rinse and dry out the vanilla bean skins. You can add them to a container of tea/coffee/sugar, and it will impart a delicate and lovely vanilla flavour.

    Didn't have enough straws so added 100g of blueberries - OMG so good - I also used brown sugar instead of rapadura and worked fine. Made this first & used it in jam drops.

    No you can't double it! Boils over in the thermomix.

     

    You can use any combination of berries you like. I've been doing half strawberries half blueberries - YUM!

     

    You can use raw sugar instead of the rapadura - I was running low and 2brothersfoods were out of stock.

    This thickens up so well after the Veroma, delicious! I didn't have quite enough strawberries so added blueberries to make up the quantity and it worked beautifully. I've just got my TM and am looking forward to making Dani Valent's chicken harissa next.   Big Smile  Umm not sure how to do stars but I would put 5 stars! 

    So many recipes to try, but so little time!

    tmrc_emoticons.)I messed with this recipe a little bit and used 4 teaspoons of lemon juice and 2 teaspoons of vanilla essence because that was what I had on hand but it was still lovely.
