Ingredients

- 15 grams olive oil
- 1 Leek (white part only), roughly chopped
- 1 potato, peeled & roughly chopped
- 400 grams cauliflower, roughly chopped
- 1 zucchini, peeled & roughly chopped
- 2 tablespoons TM vegetable stock
- 600 grams water
- 1/2 teaspoon paprika
- pepper, to taste
- Dollop of Sour Cream, for serving
Recipe's preparation
1. Place Leek in bowl, chop for 5 secs speed 5. Scrape down sides of bowl.
2. Add oil, saute 2 mins, 100c on speed 1.
3. Add Potato, zucchini, cauliflower, TM vege stock and water. Cook 20 mins, 100c on speed 1.
4. Add Paprika and Pepper. Blitz for 1 minute, gradually increasing to speed 9.
5. Serve with dollop of sour cream.

Tip
If you are lactose intolerant, you can leave out the sour cream, it will still be tasty.
