Ingredients

Dough

  • 380g water
  • 5 level teaspoons dried yeast
  • 30g olive oil
  • 1 level teaspoons
  • 620g Baker's Flour
  • 1 level teaspoons salt
  • 30g Extra olive oil for topping

Topping

  • 50g Parmesan cheese
  • 3 Medium size potatoes thinly sliced
  • 60g Leek, white part, thinly sliced
  • 1 level teaspoons Flavoured salt

Recipe's preparation

  1. 1. Add 50g parmesan cheese cut into cubes to the mixing bowl and chop 5 sec / speed 7, empty and set aside
  2. 2. Add 380g water, 5 tsp dried yeast and 1 tsp sugar into the mixing bowl and Heat 2 min / 37c / speed 1
  3. 3. Add 620g bakers flour, 30g olive oil and 1 tsp salt and Mix 10 sec / speed 5 then Knead 1 minute .
  4. 4. Empty dough onto prepared baking tray and using oiled hands flatten the dough to the edges of the baking tray . Cover the flattened dough with baking paper and a teatowel and let stand in warm place for 1 hour. Close to the end of proving time pre-heat the oven at 200c and prepare the sliced potatoes and leek Note. I used my Thermomix Cutter to thinly slice the potatoes but the leek was thinly sliced by hand using a sharp knife.
  5. 5. Sprinkle the dough with olive oil and dimpple the dough with your fingers. Arrange the thinly sliced potatoes and leek over the dough, sprinkle with parmesan cheese, flavoured salt and a little more oil and Bake in the pre-heated oven at 200c for 30 min or until the focaccia is cooked & golden on top andbthe potato slices are crispy.
    Once out the oven let it cool before cutting and serving.
