Fruit Bread variation of Everyday White Bread

Ingredients

  • 300 grams water
  • 15 grams oil
  • 2 teaspoon Yeast, or 15 grams fresh yeast
  • 1 teaspoon sugar
  • 1.5 teaspoons ground cinnamon
  • 1.5 teaspoons ground nutmeg
  • 0.5 teaspoon ground cloves
  • 2 teaspoon salt
  • 2 teaspoon bread improver
  • 1 level tablespoon powdered malt
  • 440 grams Bakers Flour or Bread Flour, Laucke Organic Unbleached flour
  • 200 grams dried fruit medley (apricot, pear, apple & peach), see tip
  • 160 grams Cyndi O'Meara's Super Bread Mix

Recipe's preparation

    Method
  1. Toss 200 grams of dried fruit (of your choice - see tip below) in a small amount of flour and set aside.  Place 300 grams of water into mixing bowl and heat 2 min/37C/speed 2

  2. Add oil, sugar, cinnamon, nutmeg, cloves, bread improver, powdered malt, yeast, Cyndi's Super Bread mix, flour and oil mix 6 sec/ speed 6

  3. Knead 6 min/Closed lid

    Then add 200 grams dried fruit & mix for 10 sec/speed 5.

     

  4.  in mixing bowl until double in size (peeping out of MC opening) or Place in an oiled bowl and cover with cling film.  Place bowl in a warm sink 1/2 way up bowl and cover with a towel - leave until doubled in size.  This could  take at least an hour - hour & half depending on weather.

  5. Once risen, if dough still in mixing bowl knead 30 secDough modeor knock back by hand.

  6. Roll and shape to fit in tin.  Spray with water and leave to rise in sink of warm water as before until dough reaches top of tin.

  7. Place into a cold oven and set to 180C fan forced.

    Placing  dough into a cold oven gives the dough a little bit more rise as the oven heats up

  8. Cook 30 min, remove from tin and place back into oven for a few minutes for a crunchy crust.

    Placing a dish of water into the bottom of the oven will also help to give a crisper crust.

Tip

I use a mixture of fruit medley, sultanas, goji berries, craisins or whatever dried fruit I have on hand or what takes my fancy on the day.

    Thank you so much. I threw the fruit in at the start of the kneading process. Cooked in a loaf tin with a lid and filled the tin beautifully, like buying a loaf. Will definitely be using this again and again. Thanks again

    This turned out beautiful I didn't add the malt and I didn't know what Candi's O'Meara's Super Bread Mix was so I left that out also. Turned out just fine. Thank you for the recipe it's a keeper.

    I tried this fruit bread and I let it rise in the thermomix overnight which may have been too long and it didn't rise a great deal for the second time. I also placed it in a large bread tin as opposed to a medium tin which I gather I should have greased as it ended up sticking to the base. I cooked the fruit bread as above but it was still doughy and I was unable to eat it. I would like to try this recipe again but would welcome any feedback

    Very happy with this recipe, light, fluffy loaf much like those I buy in the shops. Kids happy with the result too tmrc_emoticons.)

  • When should you put the

    When should you put the spices? I had to mix it for 30 seconds and then by hand to mix the fruit in. Does soaking it make it mix more easily? despite all this it came out really well. I used laucke german bread mix so it was a nice, dense, hearty, healthy losf. Thank you.

    loved this recipe, allthough yes I missed the spices to as its not listed so tried adding them after it was kneaded was a bit difficult but the trusty thermy managed. I will soak the fruit next time and see! Thanks

    Oh dear,(yum!) I made the mistake of making this today! I say mistake because I normally don't eat bread, but made it for the kids. I'm now on my third slice, slathered with butter and I'm going to have to force myself to stop! Great recipe, kids are loving it too. I left out the bread improver and its still great. Thank you tmrc_emoticons.)

    Thank you for your comments I have been doing more work on both of my bread recipes and now feel I have it down pat and much improved.  I now add 2 tablespoons of powdered malt to both of my bread mixes and have also added some dates to my fruit mix which I chop in the Thermomix for 2 - 3 seconds on about speed 4 or 5 just have to be careful you dont chop them to fine.  I also toss my fruit in a little flour so that ithe fruit is lightly coated with flour.  Then I add the fruit after the first rise and knead for 1 minute.

    Thank you for your comment Julie.  Since posting this recipe I have now made it with soaking the fruit in hot water first.  Fruit mixed through a lot better and the loaf was even more delicious and stayed fresh for a week.  Surprised it lasted that long it was so nice.  I am also going to try kneading instead of mixing to see what the end result is.  Will let you know
