Rough Eggplant Lasagne

  • 70 g Cheddar cheese
  • 70 g parmesan
  • 2 eggplant
  • 2 onion
  • 5 cloves garlic
  • 20 g sage, fresh
  • 40 g olive oil
  • 1 Lemon peel
  • 800 g canned tomatoes
  • 250 g lasagne sheet, fresh
  • 50 g almonds
  • 1 tsp salt
  • 1 tsp paprika
  • 0.5 tsp smoked paprika
  • 1 tsp dried oregano
  • 250 g water

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipe's preparation

    Steps
  1. Add Cheddar Cheese and Parmesan then blend 5 sec/speed 9, and set aside in a bowl.
  2. Add Almonds, Salt, Paprika, Smoked Paprika, Oregano, 20g Olive Oil
  3. Cook 4 min/Varoma/speed 2
  4. Blend 10 sec/speed 6
  5. Add 10g Fresh Sage (leaves only) and Rind of 1 Lemon to the mix and Set aside in a bowl to sprinkle on top at the end
  6. Without washing bowl, add 5 Cloves Garlic and Blend 3 sec/speed 8
  7. Add Water, Olive Oil, Remaining Half of Fresh Sage, 2 Tins Tomatoes
  8. Slice the 2 Eggplants Lengthways and chop in 2cm X 5cm Strips. Add to Varoma Steamer.
  9. Peel and Quarter the 2 Onions. Add to Varoma
  10. Cook 30 min/Varoma//speed 3, Meanwhile, Oil a Lasagne Dish and Preheat Oven to 200ºC Fan Forced
  11. Pour contents of Varoma into Thermomix, MC Off, Varoma on top to avoid splatter, Cook 10 min/100°C//speed 2
  12. Pour mix into prepared dish, rip up lasagne sheets and roughly push them into the mix, Stir
  13. Add cheese and nuts topping, Bake for 25 min, or until golden and bubbling.
