Chicken Broth Soup
- 60 grams spring onions / shallots (peeled)
- 20 grams extra virgin olive oil
- 1 carrot (peeled), cut into slices (1cm)
- 1 celery stick, cut into slices (1cm)
- 300 grams chicken thigh / breast fillets (skinless), cut into slices (2cm)
- 1000 grams water
- 1 heaped tablespoon Vegetable Stock Paste (BCB)
- dash soy sauce (to taste)
- fresh parsley leaves, torn into pieces, to serve (optional)

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
1. Add spring onions / shallots into mixing bowl and chop 5 secs/speed 7.
Scrape down sides of mixing bowl with spatula.
2. Add extra virgin olive oil and sauté 3 mins/120˚C/speed 1.
3. Add sliced carrots, celery, chicken fillets, water, vegetable stock paste and soy sauce and cook 15 mins/100˚C/"Counter-clockwise operation" /speed 1.
4. Serve soup hot, sprinkled with parsley leaves (if using).

Got my procedure in two days, so thought I'd follow suit with this recipe recommendations! Wow - what a ripper!!
I added a few garlic cloves, just cut up an onion and then sauted all the veges at the start without blitzing them for 5 mins. I then added the chicken, water, stock etc, cooked for 15m - and have just strained off the most beautiful broth soup! This is such a winner. Will be making it again for sure. Thanks for creating.

After reading the good feedback from another person who needed a broth for the same reason I decided to give it a go. This is absolutely delicious and can be used for the base of so many dishes. I made a batch up before having some surgery and at the moment this is my go to "meal". I cooked the chicken in the basket so that it was easier for me to remove for a liquid only meal. Its so tasty for just a clear fluid.

Very tasty. Made for someone who was unwell, and only had a small taste, but the broth seemed very nice, and not as bland as some I've tried in the past. I would definitely make this again.

This was a great, wholesome, tasty soup. I added some garlic and ginger (to help with colds) and also some vermicelli rice noodles. Everyone enjoyed it!
Love this fast and YUMMY
Love this fast and YUMMY soup. I have made this a few times now. In the last batch I added 3 garlic cloves (needed to kill a cold) and used leek instead of onion all chopped in the first step and saute the same.
This has been a winner in my home with kids and adults and I am making 3 batches for my Netball club's commitee meeting. I know they will love it!!

This was great. Nice balance of flavours for a yummy basic soup. I added about 60 grams of macaroni as well to make it a little more filling.
