Best ever pumpkin and veggies soup
- 1 brown onion
- 3 cloves garlic
- 20g olive oil
- 500g pumpkin flesh of choice
- 350g Sweet Potatoes
- 150g Zucchinis
- 100g carrots
- 2 level tablespoons Vegetable stock paste
- 1 level teaspoons sweet paprika
- 700-800g water

- 1. Add onion and garlic to the mixing bowl, chop 7 sec/speed 5
Scrape down sides of the bowl.
2. Add olive oil and cook for 6 min/varaoma temp/speed 1 placing the simmering basket on top of the lid instead of the MC.
3. Chop Pumpkin, Sweet potoato, zucchini & carrots into small chunks (approx 4x4cm)and add to the bowl once onion is cooked.
4. Add water, stock, & paprika and cook for 20 min/ 100 deg C/reverse speed1.
Place the simmering basket on top of the lid instead of the MC during cooking time.
Make sure vegatables are very soft (if not cook for another 5 min or to your liking.
5. Remove the simmering basket, place the MC on the lid and blend for 1 min/speed 5 gradually increasing to speed 9.
6.Serve with a spoonful of cream or sour cream if you desire!

The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
