  • 125 grams Salted butter, cubed
  • 400 gram sweetened condensed milk, can of
  • 60 grams golden syrup
  • 30 grams glucose syrup
  • 130 grams brown sugar
  • 200 grams white chocolate, chopped
  • 1 tsp salt flakes

Recipe's preparation

  1. 1. Grease and line a 20cm square cake tin with baking paper

    2. Place butter, condensed milk, golden syrup, glucose syrup and brown sugar in TM bowl - 5 min 50C SP1

    3. Increase temperature to 70C 5min SP1 (MC off)

    4. Increase temperature to Varoma, 13 mins SP 2 (MC off)

    5. Add in white chocolate 2 mins SP2 (MC on)

    6. Pour into prepared square pan and smooth the top.

    7. Sprinkle with the salt flakes

    8. Let the caramel cool for 60 mins on the bench. Cover and place in fridge overnight or until firm.

    I have just made this recipe for the second time, it's absolutely perfect, I followed all the comments and I forward the the speed in step 4.


    I just realised I didn't read all the comments properly and both times I have made it, in step 4 I increased the speed to 4... whoooooops and lucky I didn't burn myself

    Readicook: This happened to mine one year, i left it in the fridge for a few days and it eventually set a bit more, so I rolled teaspoons full into balls, and covered them in crushed pretzels, huge hit at work!!

    I did as Samtac and other's suggested! I left the glucose out and cooked on speed 3 in step 4.
    It worked out perfect! YUM!..

    I am so looking forward to making this for Christmas gifts.

    As instructed step 4 I used speed 3 and didn't use glucose syrup. The fudge tastes amazing and set beautifully. I'm not a sweet tooth but I just don't know what it is about this recipe I cant stop at 1 piece! This recipe is a keeper.

    I really wish that this recipe had been updated to reflect the changes noted in the comments. Wasted a lot of ingredients and have nothing to serve now. Really devastated. tmrc_emoticons.( I am going to go back to the old way of doing it. It would be of benefit to everyone if the recipe was updated with more correct detail. Won't bother again.

    I agree with the comments about it being annoying that the temp has changed in step 4. tmrc_emoticons.-( I have used this recipe countless times. It was one of the first things I made when I got my thermie and everyone loved it. So I tried to make it again yesterday as a farewell to take in for my last day of work today and it hasn't set at all. I have read the comments and will try again using the original temp but obviously it won't be ready for me to take in to work in 20 minutes time. tmrc_emoticons.-(

    I didn't bother reading the comments before making it (which I usually do with a new recipe) because as mentioned, I have used the recipe before and it worked great. I had no reason to suspect the recipe had been changed.

    Made this for a bake sale for my daughter’s school. Made the mistake of placing it on a plate with a successful chocolate fudge recipe from recipecommunity.
    Just one big sticky ugly mess that would not set even when placed in fridge drawer at minus 1.
    Please, Please remove this recipe because not everyone has time to scour through all of the comments.

    The recipe has been changed from speed 3 to 2 as i printed my recipe out last year and it says sp 3 at step 4 so i have never had a problem with it not setting. Its the best fudge ever and doesnt last long in my house

    I have cooked this several times, a couple of years ago (with what people say is the original recipe) and again twice today. It has worked perfectly for me. I have a TM5 so instead of varoma I did 120 degrees for 13 mins at speed 3 - mc off.

    Wow!! Absolutely divine. Took the suggestions for my TM5 and used Speed 3 for Step #4. Set beautifully. I used Milky bar blocks for the white chocolate and grated them before Step #2.
    I was a little light handed sprinkling the salt so would add a bit more next time. Soooo yummy!!!

    SPEED 3 DURING THE VAROMA STAGE IS THE DIFFERENCE BETWEEN THIS BEING FANTASTIC OR FAILING!! (yes, really!)

    Please excuse the capitals, I wanted that to stand out tmrc_emoticons.) .

    Thank you so, so, so much for the comments explaining what has gone wrong with this. This was a foolproof, fantastic recipe that suddenly went to pot. I blamed the chocolate (Cadbury constantly tinker with their recipe) and changing to Nestle helped but I still had issues with it not setting. I was genuinely surprised at how much more cooking occured when I returned to speed 3. The colour is darker, the smell during cooking is stronger, and the droplets from steam that I used to so carefully avoid dripping into the fudge when I removed the TMX lid, have returned. I've just seen the reply saying that speed 3 is a safety issue at varoma temp (Really?? More than higher speeds with any other also very hot temperature that is also capable of burning skin?! If so than we all deserve refunds for unusable machines....). So if this recipe is to be used, the options are to risk speed 3 at the varoma stage or to try cooking for longer to compensate. Next time I'll add another 10 minutes to the varoma temp with speed 2, and see how that goes.

    Disappointed with this recipe. Tried it first of all without reading all the comments and the changes that had to be made, so it didn’t set (step 4 should be speed 3 not 2). Then tried it again, with another batch of ingredients and it is still a sticky toffee type fudge. Not a crunchy solid fudge. It is 40 degrees Celsius where I am so that may have affected it but I’ll not be trying it again after two failed attempts. I’ll go back to my old stove top fudge instead. Sorry.
