Sauce

  • 100 grams Chillies
  • 4-5 cloves garlic
  • 1 onion, Halved
  • 1 tablespoon oil
  • 1 can Tomatoes 400g
  • 1 tablespoon fish sauce
  • 3 tablespoons rice vinegar
  • 3 tablespoons Brown Sugar.

Recipe's preparation

  1.  chillies in bowl (stems removed) and chop 3 sec, speed 7 and set aside

  2. Place garlic and onion in bowl and chop 3 sec, speed 7. Scrape down sides add oil and sauté for 3min Varooma speed 1

  3. Add chilli, tomato, fish sauce, vinegar and sugar, 40min/speed2/100 mc removed simmer basket on lid

  4. Allow to cool slightly before placing in sterilised bottles or jars

  5. For a smoother sauce blend 15sec speed 7 going up speed slowly scrape down sides and repeat

Tip

For an extra garlicky sauce use 1-2 heads of garlic and an extra tb of rice vinegar

    I used 150gm birds eye and 400gm fresh tomatoes plus a splash of water. I didn't deseed my chillies and the sauce is blazing hot.

    good flavours, I was concerned that there's no salt, but it's not needed, obviously the fish sauce gives it enough!
