Creamy Thai Pumpkin Soup with Dumplings
- 1 onion cut into quarters
- 3 garlic
- 100 g carrots roughly chopped
- 100 g Celery roughly chopped
- 300 g Pumpkin Roughly Chopped
- 150 g sweet potatoes roughly chopped
- 80 g Thai red curry paste , homemade or storebought
- 750 g water
- 1 heaped tablespoons chicken or vegetable stock paste
- 400 g 1 x can coconut milk or cream
- Salt & pepper to taste
- 20 g olive oil
- 20 dumplings, fresh or frozen, homemade or storebought
Garnish
- As per liking, can use...chopped shallots, asian greens, chopped chives, chopped coriander, fried shallots, sliced red cayenne chillies , julienned carrots

- 1. Add onion & garlic into the mixing bowl and chop 3 sec/speed 7. Scrape around the bowl then Add oil and Saute 3 min/120c/speed 1.
- 2. Add Thai red curry paste into the mixing bowl and Saute 3 min/120c/speed 1.
- 3. Place dumplings into the varoma dish & tray, cover with lid and set aside.
- 4. Add chopped carrots, celery, pumpkin, sweet potato, water, chicken or vegetable stock & coconut milk or cream into the mixing bowl. Place the varoma with dumplings in place ontop of the mixing bowl lid and Cook 25 min/100c/Reverse speed 2.
- 5. Remove the Varoma and set aside. Taste test the soup and adjust the seasoning if needed then Blend 1 min/speed 5.5 to 8.
- 6. Serve steamed dumplings straight into the serving bowls and top with soup.
Garnish the soup as per choice.

Please Note :
I used homemade Thai red curry paste that is at medium heat (chilli) level
If using storebought Thai Red Curry Paste follow the lable instructions on qty usage as some storebought Curry pastes very in heat(chilli) levels.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
