Chewy Almond Biscuits
- 200 g almonds
- 200 g caster sugar
- 60 g plain flour
- 80 g apricot jam
- 3 egg whites, room temperature
- 24 almonds, for decoration

- Mill almonds for 10 seconds on speed 7.
- Preheat oven to 160C. Line 2 baking trays with non-stick baking paper.
- Add sugar and plain flour to almonds in bowl. Mix for 5 seconds on speed 4.
- Scrape down sides of bowl.
- Add apricot jam and egg whites.
- Mix for 10 seconds on speed 4.
- Scrape down sides of bowl.
- Mix for 5 seconds on speed 4.
- Scoop tablespoonfuls of mix onto baking tray. Top each biscuit with an almond.
- Bake for 15-18 minutes. Biscuits should be light golden but still soft.
- Remove from oven and leave on tray for 5 minutes.
- Transfer to a wire rack to cool completely. They will firm up but remain chewy.
- Store in an airtight container for up to 5 days.
