  • 200 g almonds
  • 200 g caster sugar
  • 60 g plain flour
  • 80 g apricot jam
  • 3 egg whites, room temperature
  • 24 almonds, for decoration

Recipe's preparation

    Biscuits
  1. Mill almonds for 10 seconds on speed 7.
  2. Preheat oven to 160C. Line 2 baking trays with non-stick baking paper.
  3. Add sugar and plain flour to almonds in bowl. Mix for 5 seconds on speed 4.
  4. Scrape down sides of bowl.
  5. Add apricot jam and egg whites.
  6. Mix for 10 seconds on speed 4.
  7. Scrape down sides of bowl.
  8. Mix for 5 seconds on speed 4.
  9. Scoop tablespoonfuls of mix onto baking tray. Top each biscuit with an almond.
  10. Bake for 15-18 minutes. Biscuits should be light golden but still soft.
  11. Remove from oven and leave on tray for 5 minutes.
  12. Transfer to a wire rack to cool completely. They will firm up but remain chewy.
  13. Store in an airtight container for up to 5 days.

Recipe converted and adapted from SFI May 2004.

Recipe makes 24 biscuits, I only got 17 from the dough.
