Miso salmon with rice and vegetables

  • 20 g piece fresh ginger
  • 75 g miso paste, white (shiro)
  • 75 g mirin
  • 40 g Soft brown sugar
  • 1 tsp sesame oil
  • 0.24 tsp salt
  • 6 fresh salmon fillets, skin on
  • 200 g white rice
  • 2 carrots, julienned
  • 250 g snow peas
  • 2 bok choy
  • 250 g broccoli florets, small
  • 1000 g water
  • sesame seeds

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Salmon
  1. Add ginger to mixing bowl and chop 5 Seconds/Speed 8.
  2. Scrape down sides of bowl and and repeat if necessary. Then, add miso paste, mirin, brown sugar, sesame oil and salt and blend 10 Seconds/Speed 6.

    Transfer marinade into a baking dish large enough to accomodate your salmon.
  3. Place salmon into dish with marinade (skin side up) and place into refrigerator for 30 minutes, or up to 2 hours.
    Meanwhile, preheat oven to 180 degrees and prepare vegetables.
  4. Vegetables and rice
  5. Without washing bowl, weigh 250g rice into simmering basket and rince well. Add 1000g of water to Thermomix bowl.
  6. Prepare vegetables, and place into Varoma dish, starting with carrots, then broccoli, then bok choy, then snow peas.
  7. Once your salmon has time to marinade, flip it over so the skin side is down, spoon over excess marinade, and transfer it to the oven.

    Set your Thermomix timer for 17 minutes/Varoma/Speed 3.
  8. After about 10 minutes, or once you can see the salmon is almost cooked to your liking, remove it from the oven. Switch oven to grill. Then return salmon to oven until the marinade starts to brown and blister.
  9. Serve rice, vegetables and salmon sprinkled with a few sesame seeds and sliced spring onions/shallots.

Tip

Your salmon may require more or less time, depending on the thickness of the fillets.

Check the fillets by inserting a fork into the thickest part of the fillet, then gently pull. If the fish is soft and flakes easily, then it is done.
