Recipe's preparation
Place water, yeast and sugar into mixing bowl and heat 1 min and 30 seconds /37C/speed 2
Add flour, salt, bread improver and oil.
Knead 6 min/"Closed lid" Interval setting
Either leave dough in warm mixing bowl, or place in an oiled bowl and cover with cling film. Place bowl in a warm place and leave until doubled in size. This could take at least an hour depending on weather.
some tips to assist with rising in colder weather -
- warm your thermoserver with hot water - rinse and dry - place dough in thermoserver to rise.
- heat a heatpack and sit bowl on warm heatpack to assist with rising.
Roll and shape to fit in tin. Spray with water and leave to rise until dough reaches top of tin.
Place into a cold oven and set to 200C fan forced.
placing dough into a cold oven gives the dough a little bit more rise as the oven heats up
Cook 30 min, remove from tin and place back into oven for a few minutes for a crunchy crust.
placing a dish of water into the bottom of the oven will also help to give a crisper crust.

Tip
This is an easy everyday loaf of white bread..We would make this loaf every second day and have not bought a loaf since owning our thermomix.
You could substitue out some white flour for wholemael flour, or add grains or seeds.

I used apple cider vinegar as my improver and also rolled into two balls and placed one at each end of the loaf tin.

I like the idea of having fresh bread for first thing in the morning, so this is where a bread maker has always appealed to me. In saying this, can anyone tell me if I were to make the dough the night before in the thermo, let it prove overnight and then in the morning pop into the tin and bake...will this work? Or would overnight be too long proving? Thank you. Love the idea of giving kids fresh bread for breakfast or making lunch.

perosnally, I would also use the sugar recommended in the recipe too, which will help the yeast. So, add an acid and sugar and I'd say that will work. But I've also made the dough without improver and it turned out well.

I couldn't make a decent loaf before, now this is my go to recipe and hasn't failed yet (we make it regularly now, no more store bought bread for us).
So successful, we bought a special loaf tin, which this recipe fills completely.

Tips - As soon as I've mixed the dough, I quickly take it out of the Thermomix and roll it in a ball. I pop it back in to rise in the Thermomix. It's been cold the past few days and I've had no problems with it rising (I leave it for an hour).
I preheat the oven to 40 degrees and turn it off. When I transfer the dough over to the bread tin (I use the Thermomix brand one), I pop it in the slightly warm oven for 30 minutes to rise.

I am new to cooking bread so was a bit nervous....
I am new to cooking bread so was a bit nervous. Being the middle of winter I was also worried about the rising times. I ended up microwaving a wheat bag and then putting my bowl/tin in the microwave with the warm wheat bag but my second rise still took 2.5 hours to reach the top of the tin. But the result is perfect!

For those asking: I used a jumbo bread tin and I use canola spray to spray the tin before putting the dough into it. I've never had a problem with bread sticking doing that.

Ok people, I consider myself a fairly savvy Thermomix user (and cook in general), but this was SUCH a massive fail for me.. First of all it hardly rose in the bread tin and secondly it wouldn't come out of the tin after baking!!!
Would appreciate more specific guidelines for the baking stage such as size of bread tin to use, how to prepare the bread tin etc. Not all of us are expert bread-makers! Wah
