Raisin bread

  • 360 g lukewarm water
  • 3 heaped tablespoons brown sugar
  • 2 tsp dried instant yeast
  • 600 g white bakers flour
  • 1 tsp salt
  • 2 tsp bread improver
  • 2 tsp ground cinnamon
  • 1 tsp mixed spice
  • 150 g sultanas

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Raisin bread
  1. Preheat oven to 200 deg.
    Weigh out sultanas and place in warm water to soak.
    Add all ingredients to the bowl in order and combine for 20 sec sp 3.
    Use dough function and knead for 6 mins.
    Drain sultanas.
    Place on mat or floured bench and knead the sultanas through the dough by hand.

    Place dough in a bread tin to prove, depending on the day it could take up to an hour.

    Once dough is nilly to the top place in the oven.
    Check after 30 min to see if it has browned a little.
    Take bread tin lid off and allow the rest of the loaf to brown up.

    Cool on a wire rack.

Tip

Have some extra flour on hand so that the dough doesn't stick to your fingers as you are kneading in the sultanas.
